Meet your host: Lou
Lou’s journey into kombucha started while studying for her Master’s in Food Science. Already brewing at home, she became fascinated by what was actually happening inside the bottle and began examining her brews under a microscope. That curiosity eventually became her Master’s thesis, with her research going on to be published in academic archives. Before turning brewing into a business, Lou worked as an NHS nutritionist, supporting children and families with obesity, diabetes and weight management, where she saw first-hand the impact high-sugar soft drinks could have on people’s diets. Today, she brings those two worlds together, combining proper food science with years of hands on brewing experience to make fermentation understandable, practical and good fun.

Discover the science behind great kombucha and learn how to brew your own from scratch. You’ll explore fermentation, flavour and the fascinating world of SCOBYs before getting hands-on with the brewing process yourself. Best of all, you’ll leave with your own jar of kombucha ready to ferment at home, plus the knowledge and confidence to keep brewing long after the workshop ends.

As everyone arrives, we’ll kick things off with an introduction to the wonderfully weird world of kombucha, exploring the science, fermentation and flavour behind every bottle. Then it’s time to get hands-on and brew your own batch, leaving with a jar ready to ferment at home.

Most of our workshops are hosted at your venue, whether that’s an office, showroom, breakout space, warehouse or somewhere completely different. Where you need us to provide the space, we also have our own venue in the heart of Wapping, ready to host you and your guests.
Please check the Venue Requirements below, as some experiences require specific facilities such as kitchen equipment, extraction, temperature-controlled environments or outdoor space.

Lou’s workshop requires tables and seating for all guests, with enough worktop space for everyone to brew comfortably and a clear area for demonstrations. The venue will also need access to standard electrical sockets and running water. All specialist brewing equipment and ingredients are provided.
