Meet your host: Simon

Simon founded Rocks Oysters after spending years as a chef hearing restaurants proudly claim they served "the best oysters in London." The reality was often very different. Most were buying the same three or four oyster varieties from the same wholesalers, with little thought given to where they came from or how dramatically their flavour could vary. Determined to change that, Simon began working directly with independent Irish oyster farms producing exceptional shellfish with real character. They now supply 34 to 50 restaurants a week, run successful market stalls across London, and of course deliver exceptional events.

‘I’m passionate about this because an oyster should taste like where it came from, not just “the sea.” Connecting people to that difference, watching someone taste a really exceptional oyster for the first time, that’s what I’m in it for.’

Discover the world of exceptional Irish oysters in a relaxed, hands on workshop led by Simon. You’ll learn how to shuck like a pro (with a chainmail glove, we’re not mental), explore how each oyster’s origin shapes its flavour, and taste a carefully chosen selection alongside a glass, or two, of English fizz. Informative, interactive and never stuffy, it’s a brilliant introduction to oysters for curious beginners and seasoned shellfish lovers alike.

Masterclass Itinerary

As everyone arrives, we'll welcome you with a glass of English fizz before introducing the fascinating world of oysters. From there, it's time to get hands-on as Simon demonstrates the art of shucking, before you taste and compare a carefully selected range of exceptional Irish oysters.

You shuck, you taste. Your turn. Six different oysters, one knife, and me hovering to help. We taste as we go, with a few simple accompaniments and whatever drink suits the moment. Six different rocks from very unique oyster beds.
